Ingredients
- 2.0 cups arugula (washed)
- 1.0 piece cucumbers (sliced)
- 1.5 cups grape tomatoes (halved)
- 0.5 cups hummus
- 0.25 cups kalamata olives (pitted)
- 0.5 cups feta (crumbled)
- 0.5 cups greek yogurt
- 1.0 pound chicken (cooked and sliced)
- 0.5 cups lemon tahini dressing
- 2.0 cups cilantro lime rice & quinoa (cooked)
Instructions
- Step 1: Prepare all fresh ingredients by washing and slicing them as needed.
- Step 2: Cook the chicken until it reaches an internal temperature of 165°F.
- Step 3: Prepare the cilantro lime rice & quinoa as per package instructions.
- Step 4: In a bowl, layer the arugula, cucumbers, and grape tomatoes.
- Step 5: Add a scoop of hummus and sprinkle kalamata olives on top.
- Step 6: Crumble feta cheese and add a dollop of Greek yogurt.
- Step 7: Place the cooked chicken over the salad mix.
- Step 8: Drizzle with lemon tahini dressing to taste and serve.
