Indian-Inspired Chicken Meal Prep Bowls

Ingredients
- 1.0 head cauliflower (chopped)
- 1.0 tablespoon lemon juice
- 2.0 cloves minced garlic
- 0.5 cup peas
- 1.0 small red onion (diced)
- 1.0 medium russet potato (diced)
- 2.0 tablespoons plain yogurt
- 1.0 lb chicken breasts (cut into 1-inch pieces)
- 1.0 teaspoon coriander
- 1.0 teaspoon cumin
- 1.0 teaspoon curry
- 0.5 teaspoon garam masala
- 1.5 teaspoons ground dried ginger
- 1.0 tablespoon olive oil
- 8.0 pakoras (frozen)
- 1.0 teaspoon salt
- 1.5 teaspoons turmeric
Instructions
- Step 1: Preheat oven to 400 F.
- Step 2: Mix chicken together with marinade ingredients and let marinate for 10-15 minutes.
- Step 3: Toss cauliflower, potatoes, and red onion with the aloo gobi spice ingredients and olive oil on a baking sheet.
- Step 4: Bake the vegetable mixture for 15 minutes, then remove from oven.
- Step 5: Mix peas into the cauliflower mixture on the baking sheet.
- Step 6: Add marinated chicken and pakoras to the same baking sheet and bake for 15 minutes, turning pakoras and tossing chicken halfway through.
- Step 7: Remove from oven, and serve!
