Cilantro Lime Rice

Ingredients

  • 1.0 lime
  • 0.25 oz cilantro
  • 1.0 tablespoon butter
  • 0.5 cup jasmine rice
  • to taste salt

Instructions

  1. Combine ¾ cup water, rice, and a pinch of salt. Bring to a boil; cover and reduce to a low simmer. Cook until rice is tender, 15-18 minutes. Keep covered off heat until ready to serve.
  2. Fluff rice with a fork; stir in cilantro, lime zest, juice from half the lime, and 1 TBSP butter. Season with salt and pepper.
