Turkey & Greek Salad Lettuce Wraps

Ingredients

  • 1.0 unit baby lettuce
  • 2.0 cloves garlic
  • 1.0 persian cucumber
  • 1.0 red onion
  • 1.0 roma tomato
  • 0.5 cup feta cheese
  • 10.0 oz ground turkey
  • 1.0 teaspoon cooking oil
  • 1.5 oz greek vinaigrette
  • pepper (to taste)
  • salt (to taste)
  • 1.0 tablespoon turkish spice blend
  • 2.0 tablespoons soy sauce

Instructions

  1. Step 1: Wash and dry produce. Trim and quarter cucumber lengthwise; slice crosswise into 1⁄2-inch pieces. Dice tomato into 1⁄2-inch pieces. Halve, peel, and finely chop onion. Peel and mince or grate garlic. Trim and discard root end from lettuce; separate leaves.
  2. Step 2: In a medium bowl, combine cucumber, tomato, 2 TBSP onion, and vinaigrette. Toss to coat.
  3. Step 3: Heat a drizzle of oil in a large pan over medium-high heat. Add remaining onion and a pinch of salt; cook, stirring, until slightly softened, 2-3 minutes.
  4. Step 4: Add turkey, Turkish Spice, garlic, and half the soy sauce to the pan. Cook, breaking meat up into pieces, until turkey is cooked through, about 4-6 minutes. Season with salt and pepper to taste.
  5. Step 5: Stir in a splash of water near the end of cooking to make sure your turkey is nice and saucy!
  6. Step 6: Divide lettuce between plates. Fill with turkey and salad. Spoon any remaining vinaigrette from bowl over top.
  7. Step 7: Garnish wraps with feta and serve.
