Firecracker Cauliflower

Ingredients
- 1.0 large head cauliflower (cut into florets)
- 0.25 cup green onions
- 2.0 cloves minced garlic
- 1.0 tablespoon canola or vegetable oil
- 0.25 teaspoon hot pepper flakes
- 0.25 teaspoon pepper
- 0.25 teaspoon salt
- 0.5 cup brown sugar
- 2.0 tablespoons cornstarch
- 0.33 cup frank's redhot original cayenne pepper sauce
- 2.0 cups rice (cooked)
- 1.0 tablespoon rice vinegar
- 0.25 cup water
Instructions
- Step 1: Preheat oven to 450°F and lightly oil a large baking sheet.
- Step 2: In a large bowl, combine cauliflower, oil, garlic, salt and pepper, tossing to coat. Arrange the cauliflower on the prepared pan, spreading it out evenly. Roast for 25 minutes, flipping halfway through until the cauliflower is tender and browned.
- Step 3: While the cauliflower is roasting, prepare the Firecracker Sauce by mixing water and cornstarch together in a small bowl. Then, in a small saucepan, combine brown sugar, hot sauce, water, cornstarch mixture, rice vinegar and hot pepper flakes. Bring to a simmer over medium-low heat and cook, whisking often, until thickened, about 5 minutes.
- Step 4: Drizzle the sauce over the roasted cauliflower, tossing to evenly coat. Return the cauliflower to the oven and continue baking for an additional 4 to 8 minutes until sticky and delicious.
- Step 5: Serve the cauliflower over rice and garnish with green onions.
